Chicken broth
The grandmothers already said that chicken broth is a concentrate of energy! This version with vegetables and a pinch of curry is a delicacy! try also this beef salad bowl recipe too.

1 onion
500 g of soup vegetables, for example, carrots, celeriac and leek
1 chicken per broth or hen, in speciality stores
3 sprigs of parsley
3 sprigs of thyme
2 bay leaves
½ teaspoon of peppercorns
1 pinch of curry
1 teaspoon of salt
pepper

Halve the onion with the peel horizontally and let the two cutting surfaces almost black in a pan. Thoroughly clean the vegetables and cut them into pieces without peeling them. Rinse the hen under cold water internally and externally. Put the onion, vegetables, chicken, parsley and all the spices in a saucepan. Cover all the ingredients with cold water. Boil the chicken just below the boiling point for at least 2 hours. Skim the broth and remove the substances that cloud the broth with a skimmer.
Remove the hen from the broth and let it cool a little. Meanwhile, strain the broth into another pot with the help of fine gauze. Eliminate the vegetables and spices. Bring the broth to a boil and boil it over high heat for approx. 5 minutes. Remove the hen's skin. Remove the meat from the bones, cut it into bites and put it back into the broth. Useful tips
Enrich the broth to taste by adding other ingredients such as frozen peas, vegetables (carrot, leek) cut into fine cubes (brunoise), small pasta such as capellini or letters.
